Mexican street corn made into a delicious dip!

Empty corn package into bowl add 1.5 cups very hot water, let sit for 20 minutes. Drain any excess liquid.

While corn rehydrates:

Add small spice packet to 16 oz sour cream.  Mix well.  Add rehydrated corn mix to sour cream.  Refrigerate 2-4 hours or overnight for best results. (optional: top with Cotija cheese)

Serve with tortilla chips.
